100% whole grain muffins, full of antioxidant-rich fruit, and free of oil, salt, and refined sugar!
Who loves muffins? I do! They can serve triple duty, as breakfast, snack, or dessert. And when you make them yourself, you have control over what goodness goes in, so you can eat them without guilt. Muffins are very forgiving as far as baked goods go and I've found they will tolerate some adjustment to ingredients without getting ruined.
I am loving this banana apple blueberry muffin recipe right now. It is 100% whole grain, full of antioxidant-rich fruit, and free of oil, salt, and refined sugar. There is also half a tablespoon of ground flax per muffin.
I adapted this recipe from the Fluffy Vegan Banana Blueberry Muffin recipe on the Hummusapien blog, and replaced the oil with apple. I prefer grated apple, peel and all, but I've also used applesauce and both work well. The original recipe calls for 2 cups of flour but I really like the texture the rolled oats give, so I sub a half cup of oats for some of the flour. I also make a 50/50 mix of whole wheat pastry flour and sprouted whole wheat flour, and use some of King Arthur Flour's Super 10 blend which combines spelt, millet, rye flakes, barley flakes, quinoa flakes, chia seed, amaranth, teff, buckwheat, and sorghum (find it here). As you can see, I like to make things complicated. Feel free to use whatever combination of whole grain flours you prefer, or keep it simple and use plain ol' whole wheat flour.
The apple cider vinegar (or lemon juice) with the nondairy milk gives a similar effect as using buttermilk, and the acid acts with the baking soda to help give the muffins some lift without adding any vinegar flavor to the finished product. I find I get slightly more lift with lemon juice. And usually, I just add the 1 teaspoon of cinnamon as written, but sometimes I like to make them chai-spiced instead. If you don't think your kids will appreciate the chai flavor, just stick with the cinnamon.
